Lemon Asparagus


Ingredients:


1/3 pound asparagus


1 lemon, juiced


salt and pepper to taste


1/4 teaspoon cayenne


Prepare the asparagus (rinse it and break off any tough, white bottoms). Cut the asparagus into 1 to 2" sections. Make your slices on the diagonal. Fill a medium sized sauce pan halfway with water. Bring it to a boil. Add the asparagus and reduce the heat to a simmer. Parboil for 2 minutes. Drain the hot water. While asparagus is still hot toss it in a bowl with the lemon juice, cayenne, salt and pepper. Serve your asparagus warm or at room temperature depending upon personal taste.

1 clove garlic, minced
