Those who want to lose weight can hardly go wrong consuming more fruits and vegetables, if health authorities have anything to say about it. Fresh produce contain vitamins and minerals, but contribute very few calories to a healthy diet. In contrast, researchers have found that eating meat- and egg-based fat may increase the risk of heart disease, depending on whether it is processed by gut microbes.A study published in the journal Nature found that consuming lecithin, a fatty substance found in liver, cheese and egg yolks, increased the risk of cardiovascular disease among mice whose intestinal bacteria metabolized the substance into choline.The team noted that choline, which can be found in cauliflower, and lecithin should not be avoided, since both support cellular health. Instead, they said, individuals who eat excess eggs and fatty meats should be aware that their diet may predispose them to heart disease in many subtle ways.By choosing to eat more fruits and vegetables, people who are overweight or obese could shed weight and improve their dietary health.
